Making a Cheese Curd Molding Basket with Charlie Kennard

June 1 @ 10:00 am - 4:00 pm

$150

Event Navigation

Join us at the beautiful Fibershed Learning Center on Black Mountain Ranch near Point Reyes Station, CA, where we will learn to make a southern Italian-style fiscelle (curd drainers) of rush (Juncus), that leave the basket’s impression on the cheese—including the unusual iris diaphragm pattern on the bottom. We will sample ricotta salata, and make curds to place in a basket mold.

Experience with twining is very helpful; beginners may make a simpler basket. Experience with twining is very helpful; beginners may make a simpler basket.
